This is a carbohydrate dish made from corn dough. Corn dough is made after the maize grains have been separated from the chaff. The grains will then be washed and soaked in water in an airtight container for 2-3 days. It is then rinsed and milled into the dough. It is kneaded with a little water and kept overnight. The dough is ready for use the next day

INGREDIENTS

  • Corn dough
  • Cassava dough
  • Salt to taste

PREPARATION

  • Mix corn dough and a smaller amount of cassava dough with water until it is free from lumps and residue.
  • Add salt to taste
  • Bring the mixture to a boil while stirring with a spatula
  • As it thickens and solidifies, increase the effort behind the stirring and knead with the spatula to avoid lumps
  • Add water and allow to boil for some minutes. Continue the kneading process until desired texture is achieved
  • Cook for 45 minutes and serve
  • Serve in balls with pepper fish or any desired soup or stew for lunch or supper.
