CHICKEN PIE

Chicken is rich in a variety of important nutrients and has long been considered a healthy alternative to red meat. And it is indeed low in saturated fat, contains higher amounts of omega- 6 fatty acids than other animal meats and is high in protein and essential vitamins and minerals.

INGREDIENT

  • Vegetable oil
  • 2 cups flour
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1 teaspoon sugar
  • Onions
  • Scotch bonnet pepper
  • Chicken
  • Potatoes
  • Curry powder
  • Thyme
  • Salt
  • Seasoning cube
  • carrots

PREPARATION

  •  2 cups of flour, 1 teaspoon baking powder,1 teaspoon salt and 1 teaspoon sugar (mix to combine)
  • Add ¼ cup of cold butter and use your hands to mix till it looks like breadcrumbs
  • Gently add cold water till dough is formed
  • The dough should look smooth, don’t over-knead for a flaky pie
  • In a chopper, mince cooked chicken
  •  Pour vegetable oil into a saucepan, add diced onions, chopped scotch bonnet pepper, minced chicken, Irish potatoes, and carrots and add to combine
  • Season with curry powder, thyme, salt and seasoning cube
  • Stir then add water to cook for 10 minutes
  • After 10 minutes, add flour to thicken
  • Divide dough into four and then into two parts
  • Take one part and roll it out, then using any round plate, cut out a circle
  • Add the chicken mix in the centre then fold over
  • Use a fork dipped in egg wash, seal the edges
  • Brush all pies with egg wash and bake in a preheated oven for 35 minutes
