COCOYAM WITH GARDEN EGG STEW

Cocoyam is a healthy, regulated gastrointestinal system that can significantly boost your overall health and reduce your chances of various types of cancer. Cocoyam consist of vitamin B1 which is also known as thiamine, a crucial vitamin for increasing focus, energy, fighting chronic stress and perhaps, preventing memory loss. The garden egg also known as eggplant is a very good source of dietary fiber, potassium, manganese, copper and thiamin.

INGREDIENTS

  • COCOYAM (5 pieces)
  • GARDEN EGGS (7 pieces)
  • PALM OIL (2 cups)
  • ONIONS
  • BLENDED ONIONS, PEPPER AND TOMATOES
  • SALTED FISH (MOMONE)
  • MACKEREL SAUCE
  • SALMON

PREPARATION

  • Cook the garden eggs and remove the thin skin and seeds of the garden eggs after cooked
  • Blend the seed and skin together and set aside
  • Pour palm oil in a saucepan
  • Add onions, salted fish (momone) and mackerel sauce to cook for 3 minutes
  • Add the blended onions, pepper and tomatoes to the oil
  • Add seasoned spices
  • Add your preferred size of salmon 
  • Add salt to taste
