POTATO SALAD

The potato salad is one healthy dish that can be eaten separately or as a side dish to a main meal. The potato salad is also versatile as many can be added and it can be customized to suit the taste and preference of whoever is eating it. If eaten alone, it can be very filling as compared to other salads.

INGREDIENTS

  • Medium potatoes 
  • Salt to taste
  • Pepper to taste
  • Mayonnaise
  • Salad cream
  • Boiled eggs
  • Spring onions

PREPARATION

  • Wash, peel and dice potato into small dices.
  • Boil the potatoes until tender in salted water for 15 minutes,
  • Drain in a colander and run under cold water to stop the conking process.
  • Chill in the fridge for 30 minutes,
  • Once cooled, place into a mixing bowl and add sliced spring onions.
  • Season well then add the remaining ingredients and mix well.
  • Add chopped or sliced eggs
  • Dish into a serving bowl, cover and chill until required
  • Remove from the fridge 15 mins before serving to bring to room temperature.
